Easter Brownies with Coconut Cashew - VG / GF / PF

My family have always been down for a party/celebration. Holidays are our FAVORITE time of the year, and we always look forward to celebrating them together. Easter has always been fun not ONLY because it's a holiday during one of the most beautiful times of the year, but because it is a holiday full of candy and sweets (yes... I clearly have an intense sweet tooth). 
Brownies are timeless. I used to bake them with box mixes for every occasion. When I started to eat healthier, however, I stopped eating the classic, gooey delicious brownies I had grown up on, and holidays like Easter became candy/dessert-less. This prompted me to find healthy alternatives to the desserts I used to eat.
Introducing... Easter brownies with Coconut Cashew. The beauties are vegan, paleo, gluten free, AND peanut-free. They are delectable, sweet, and will remind you of the holiday treats you grew up on! You can add whatever you want to these brownies, whole cashews, chocolate chips, or whatever your heart desires.
Ingredients:
1 cup gluten-free flour mix
1 teaspoon baking powder
1/2 cup cocoa powder
2 TBS maple syrup
8 medjool dates
1 TBS vanilla
2 chia eggs (2 TBS chia seeds soaked in water)
1/2 cup Coconut Cashew
2oz. dark vegan chocolate
1/3 cup coconut oil
Directions:
preheat oven to 350 degrees F and grease an 8x8 pan. blend dry ingredients in a large bowl. mix the honey, dates, vanilla, chia eggs, and nut butter in a food processor. add melted coconut oil and melted chocolate to wet ingredients. Combine all ingredients together and put into pan. bake for 20 - 25 minutes. remove and let cool. Serve on its own or top with MORE COCONUT CASHEW!
